Fettuccine Pasta Cooked With Roasted Veggies

This recipe is for everyone whether you love or hate veggies. Rather than cooking them in a traditional way, we are going to roast them before assorting with pasta. This is a wonderful Italian style pasta dish comprising health and appetizing flavors all together. Let’s start gathering all the ingredients before we start to cook. 

List of ingredients 

  • A pack of eight-ounce fettuccini pasta noodles
  • ¼ th cup of parmesan cheese (Grated)
  • ¼ th cup of crimini mushrooms (Sliced)
  • ¼ th pound of asparagus 
  • 10 cloves of garlic (Roasted)
  • Half tomato (Quarterd)
  • Half teaspoons of chopped rosemary and oregano each
  • 2 tablespoons of tapenade and olive oil each

  1. Trim the woody base of asparagus and slice them in 4-inch pieces diagonally. 
  2. Take a roasting pan and add all vegetables including asparagus, tomatoes, garlic, bell pepper, oregano, rosemary and mushrooms. Pour olive oil on them and mix thoroughly. 
  3. Preheat your oven at 175 degrees C and put the roasting pan inside for the next 15 minutes. 
  4. While your veggies are roasting, bring a large pot, add water and sprinkle some salt in it. Add your pasta to cook for a maximum of 10 minutes. Keep on checking if they are ready after 8 minutes. 
  5. Drain the water, add tapenade, parmesan cheese and roasted veggies. Toss them thoroughly and serve hot with your favorite sauce.

Tagliatelle Pasta With Porcini Mushrooms

Tagliatelle is among the signature Italian pasta types that you may need to search in the Italian food online stores. Porcini mushrooms are easily available in the supermarkets or in your local vegetable shops too. This is something distinctive if you compare with penne, rigatoni and macaroni type pasta. 

List of ingredients 

  • 6 cups of tagliatelle pasta noodles
  • 1 cup of porcini mushrooms (Rehydrated)
  • Half cup of red onion, carrot and red bell pepper (Julliened)
  • Half cup of dry red wine
  • Two garlic cloves
  • 1 ½ tomato (Crushed)
  • 1 teaspoon of rosemary (Dry and Crushed)
  • 2 teaspoons of fresh basil (Chopped)
  • Salt and pepper for taste

Directions to prepare 

  1. Take a large skillet and add olive oil in it at medium heat. 
  2. Saute garlic and onions until they turn golden brown. 
  3. Add bell pepper and carrots to saute for around 4 minutes. 
  4. Raise the heat and add a half cup of dry red wine to boil for a minute.
  5. Reduce the flame to medium and add mushrooms to cook them for the next 3 minutes. 
  6. Add the remaining ingredients and mix well. 
  7. Finally, pour this material on the pasta that you have recently boiled and enjoy.
